The Cooley distillery was founded in 1987 and was the first new Irish distillery in over 100 years. The distillery has pretty small pot stills and also continuous stills, so that both single malt whiskey and grain whiskey can be produced there with a change from the traditional Irish triple distilled approach, offering a twice distilled dram. This single malt from 2002 Rare Find was finished in an ex-rum cask.
