Nose

Deeply mature and wonderfully evocative, opening with the rich, polished character of lacquered mahogany panelling. Stewed plums and Christmas pudding bring layers of dark fruit and spice, while roasted almonds add a subtle nuttiness. Berry compote sits beneath it all, with just a touch of mentholated oak bringing freshness.

Palate

Restrained yet profound, showing the quiet complexity that comes with beautifully integrated old sherry influence. Fruit cake and deep stewed fruits lead into polished wood, dried tobacco leaves and old, cracked leather. Raspberry liqueur adds a concentrated flash of red fruit, while dry cinnamon spice provides warmth and structure. Finish: Refined and wonderfully composed, with mature oak and deep stewed fruits gradually giving way to the soft, malty sweetness of malt loaf.

The distillery

Deanston

A former cotton mill, Deanston Distillery was founded in 1966 and is located near the village of Doune in Perthshire. The distillery is powered by its own hydro turbine on the River Teith, generating energy to supply the site and even export surplus electricity.

Production techniques, including an open-topped mash tun, extended fermentation and slow distillation, play an important role in shaping the spirit. The resulting Highland single malt is known for its signature waxy texture, complemented by honeyed and fruity notes.

We seek out Deanston not only for the quality of its spirit, but also for its signature waxy character. This carries confidently through maturation and rewards exploration in a range of cask styles.

The Long Game

Measured in years.Defined by decades. There is no shortcut to whisky like this. Thirty-plus years of maturation is a serious commitment. The decades have left their mark but so has everything that came before: the distillery, the spirit, the cask and the choices made along the way.

The region

Highlands

The Highlands are Scotland's largest whisky producing region, covering a vast geographical area of the mainland along with many of Scotland's whisky producing islands. Distilleries are found across diverse landscapes, creating one of the most geographically varied whisky producing areas in Scotland.

Highland whiskies are known for their wide range of styles and flavour profiles. Expressions can vary from light and floral to rich, malty and coastal, reflecting both the broad geography of the region and the distinctive production methods of individual distilleries.

This versatility makes Highland whisky rewarding for independent bottling. Their broad spectrum of spirit styles responds exceptionally well to a variety of cask types, giving opportunities to explore the interplay between distillery character and cask influence.
